This March, indulge in a culinary journey to Cusco as we celebrate the rich tapestry of Peruvian gastronomy, renowned for its rich array of ingredients and diverse cultural influences. Available from March 4–30, join us for lunch or dinner and experience the essence of Peru with a four-course prix fixe from Executive Chef Doug Penfold.
Inspired by his time spent travelling through Cusco, Lima and beyond, Chef Penfold’s progressive prix fixe explores Andean cuisine’s fusion of flavours, giving diners a taste of Peru’s simple, hearty and flavourful fare. Incorporating various starches as well as the country’s three most common peppers: aji, rocoto and panca, Chef Penfold uses his expertise in South American cuisine to dial down the spice to palate-pleasing levels, while honouring Peru’s rich heritage and bounty of unique ingredients.
Kick off your gastronomic adventure with the country’s national dish: ceviche. Our version uses Smoked Kingfish Ceviche, adorned with gooseberries and purple potatoes with quinoa for an added crunch. Next, indulge in a Tamalito Verde starring fresh tamales made with masa, butter and milk. Carefully steamed and stuffed with queso fresco, fried Japanese eggplant adds texture and rocoto peppers give an added kick.
For your plato principal, savour the bold flavours of our pork spare rib and tenderloin in the Peruvian Chicharrón where crispy pork skin reigns supreme. Accompanied by squash and spinach, this beautifully composed main is subtle yet sublime. Finish off with Guava & Vanilla Tapioca drizzled with piloncillo syrup and topped with toasted coconut and bask in the beauty of this limited-time offer.
